This week, fellow Holistic Nutritionist, Jessica Koper, has shared another one of her mouth-watering recipes with us. This time, it's a cozy Thai soup, with all the best ingredients that are healing for the gut, and warming for our bodies as we enter this colder season. A note from Jessica:

Hey Healthy By Marjan Followers!

I wanted to share this soup, that I think is great on a chilly Fall day! The warming spices really boost your digestive system which can slow down as the temperatures drop. I also made it dairy-free by using a nice healthy fat source of coconut milk. Marjan, I know you are super passionate about blood sugar balance so this recipe is perfect for your clients looking to balance their hormones. But in general, it's just an all-around feel-good recipe that leaves you feeling satiated.

Feel free to top with whatever you like! I went with coconut flakes, micro greens, hemp hearts, sea salt and pepper.

Protein Boosting Tip: if you have collagen powder at home, or a powdered chicken or beef bone broth, adding it to this recipe can help to increase protein, which helps to further balance our hormones and blood sugar.
